Often overlooked, Timor-Leste produces truly stunning coffees. When we connected with Gobie from Kape Diem, we knew we had discovered something special.
This washed lot comes from the Aileu region and has been carefully processed for clarity and complexity. Ripe cherries are hand-sorted, pulped, and then fermented for 24–40 hours to develop a bright acidity and clean profile. After fermentation, the coffee is washed and dried on raised beds.
It was produced at Orijem Timor’s Centru Kafe wet mill—built in 2023 as Timor-Leste’s first environmentally sustainable coffee mill, in partnership with the Australian Government. The facility includes a wastewater treatment system, biogas harvester, and seedling nursery, and is on track to run fully on solar power by 2026.
This lot features the Hibrido de Timor variety—resilient, unique, and offering a complex cup that blends Arabica’s nuance with subtle Robusta strength.
