Magnum Sidra is a rare and captivating coffee from El Vergel Estate in Tolima, Colombia, crafted by innovative producers Elias and Shady Bayter. Grown at 1,450 meters above sea level, this Bourbon Sidra varietal undergoes a bold Natural Mosto Anaerobic fermentation, setting it apart as one of the most complex and flavorful coffees in the world.
The process begins with 72 hours of anaerobic fermentation, enriched by mosto—a fermented juice from a previous Java coffee batch. This introduces wild, native yeasts and bacteria, resulting in a coffee brimming with character and nuance.
We taste Ripe Strawberries, Apricot and Grape Zappos. A true showcase of experimental Colombian coffee at its best, perfect for adventurous filter brewers.
