When we connected with Gobie from Kape Diem, we knew we had discovered something special.\u003c\/p\u003e\n\u003cp data-start=\"424\" data-end=\"716\"\u003eThis washed lot comes from the Aileu region and has been carefully processed for clarity and complexity. Ripe cherries are hand-sorted, pulped, and then fermented for 24–40 hours to develop a bright acidity and clean profile. After fermentation, the coffee is washed and dried on raised beds.\u003c\/p\u003e\n\u003cp data-start=\"718\" data-end=\"1043\"\u003eIt was produced at Orijem Timor’s Centru Kafe wet mill—built in 2023 as Timor-Leste’s first environmentally sustainable coffee mill, in partnership with the Australian Government.
