Farmers from Tolima, Huila and Caldas harvest peak-season cherries, which are then transported to El Vergel Estate for a 48-hour anaerobic pre-ferment and a five-day co-ferment with yeast and watermelon. The result? A refreshing, candy-sweet cup that tastes like summer holidays in a mug.
